The Holiday Cocktail – The Method

WThis is a home-style version of a drink found on our latest cocktail list. It's a large-volume pre-mixed that's packed with flavours of the festive period, rendering it perfect for a celebration. Reserve the remaining citrus syrup for brunch beverages, sweets, or to make additional servings of the drink.

Yields 10 guests

Ingredients for the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, serving 10)

400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

Making the Cordial: Put all the components inside a saucepan, heat until it reaches a light boil, agitating so the sugar melts. After that, remove from the burner and let it to cool entirely. Pour into a sterilised bottle, seal keeping it chilled, where it will keep for around one month.

For the Cocktail Base: Combine all the spirits and syrup in a large bottle, allow it to infuse for one hour, then pass it through preferably using muslin, so it's fully clarified.

When ready to serve: Pour 85ml of the cocktail base to a mixing glass containing ice, and stir carefully for about 60 seconds to cool it down. Strain into a chilled martini glass or a similar vessel, decorate with a few cranberries adding the final touch by giving it a quick spritz with the mandarin essence over the top.
